The baked ziti recipe that is on this page is based on the one listed in the Sneaky Chef by Missy Chase Lapine. I've made modifications by adding spices because the spaghetti sauce I used had a bland flavor.
Ingredients
1 pound of whole wheat rigatoni noodles
1 10 oz package of Tofu
1 cup orange puree (a mixture of sweet potatoes and carrots)
1 tbsp garlic salt
2 tsp oregano
2 tsp parsley
1 tsp pepper
2 1/2 cups spaghetti sauce
3 cups shredded mozzarella cheese
1/3 cup Parmesan cheese
Instructions
- Preheat oven to 375 degrees
- Grease a 9x9x3 baking pan
- Cook the pasta as directed
- In a separate bowl, mash the tofu with a fork
- Add the orange puree, spices, spaghetti sauce and 1 cup of mozzarella cheese and mix well
- Drain the pasta and add to the tofu, spaghetti sauce, cheese mix and mix together.
- Pour 1/2 the pasta and sauce mixture into the baking dish and top with 1 cup of the remaining mozzarella cheese
- Pour the remaining pasta and sauce mixture into the baking dish and top with the remaining mozzarella cheese.
- Top with the Parmesan cheese and bake for 20 minutes.
Review The boys loved this dish and even the pickier eater cleaned his plate! The added bonus was that David liked the dish but mentioned that it was kind of bland. Would I make this dish again? Most definitely - it was easy to make and we had leftovers.
